Watermelon refresher

The triangular wedge of bright red and green fruit isn't just a summer special.

It can be a great all-year snack as it is packed with nutrition, can hydrate a person and is also low-fat. The juicy fruit also has innumerable benefits. While it has beta-carotene, which acts as a powerful ally against many types of cancer, particularly colon cancer, the fruit is a great source of several vitamins. It has vitamin A, that induces better eye health, vitamin B6, vitamin C that can aid in building immunity and preventing cell damage as well promoting healthy teeth and gums.

- Combine watermelon, cucumber and cantaloupe for a summer salad.

Quick-fix

Watermelon refresher Ingredients:
Chunks of watermelon, seeds removed: 3 cups
Lime juice: of one lime
Lime peel: 1 tsp, shredded
Cold water: 1 cup
Salt: A dash
Mint: for garnish

Method:
Blend the watermelon, lime juice and zest until very smooth. Add in the cold water and salt; cover and refrigerate. Serve over ice and garnish with watermelon wedges and mint.
